Yummy Blueberry Pancakes

You don’t have to save having pancakes for Shrove Tuesday, you could have these any day, for breakfast or as a yummy desert treat.   

Ingredients – Makes 4 large pancakes

150g  Flour  (You can use Gluten free if you prefer or buckwheat)

1 large egg. (For vegan, use half a smashed banana instead)

200 ml milk (Non diary works just as well so a nut milk, provides the all important protein)

Handful of Blueberries per person.

Method

Place the flour into a bowl and make a well in the middle.  Crack the egg into the well and with a small whisk start to beat the egg gradually incorporating the flour.  Slowly add the milk until the mixture is of the consistency of double cream.  If you are using smashed banana instead of egg it is the same process.  

Heat a small frying pan and add either a knob of butter or coconut oil to the pan, once melted add some of the batter to the pan to cover the bottom.  Place a few of the blueberries on the batter.  Leave the pancake until bubbles start to appear on the top and at this point turn over.  Cook for a further 2-3 minutes and serve hot with either honey, agave or maple syrup or if you fancy just some fresh lemon juice and a sprinkle of sugar.
